Our signature crop and the star of our summer lineup. San Marzanos are known for their rich, sweet flavor and meaty texture — the kind of tomatoes that practically beg to become sauce. This year, we’re growing them inside the greenhouse to keep them safe from the local critters who think tomato plants are a buffet. As the farm expands, San Marzanos will move into outdoor raised beds as well, giving us even more room to grow these incredible tomatoes in true Texas sunshine.
Sweet, vibrant, and downright dramatic in the best way. Marconi Rossos are long, glossy Italian sweet peppers known for their rich flavor and incredible versatility. They’re the kind of peppers that make you look like a gourmet cook even when all you did was slice them and toss them in a pan. We grow them in deep raised beds where they can stretch tall, soak up the Texas sun, and produce those big, beautiful red pods that have become a Stargazer Farm favorite. Whether roasted, stuffed, sautéed, or eaten straight off the plant, these peppers never disappoint.

Crisp, sweet, and endlessly versatile — these peppers are pure sunshine in plant form. Sweet Apple Peppers are one of our most beloved crops, known for their bright flavor, gentle sweetness, and perfect snacking size. They thrive in our greenhouses and raised beds, producing generous harvests that make them a staple in everything from salads to sautés to mom‑approved breakfast hash. With their cheerful color and reliable growth, Sweet Apples bring a little joy to every corner of Stargazer Farm.

Reliable, flavorful, and just the right amount of kick. Jalapeños are one of the hardest‑working peppers on the farm — tough enough to handle Texas heat, generous enough to produce all season, and versatile enough to land in everything from salsas to skillet dinners. We grow them in raised beds where they get plenty of sun and airflow, producing glossy green pods that pack bright flavor without overwhelming heat. Whether you’re cooking, pickling, or snacking straight from the garden, jalapeños bring that perfect spark of spice to the table.

Fiery, fragrant, and full of personality — these peppers bring serious heat and serious flavor to the garden. Habaneros thrive in Texas warmth, producing small lantern‑shaped fruits that start green and ripen to a brilliant orange. Their heat is intense, but behind the spice is a bright, tropical fruitiness that makes them a favorite for hot sauces, salsas, and marinades.
This year’s crop surprised me with a few late‑sprouting seedlings popping up in the GreenStalks — tiny but determined — and I'm excited to see how they develop. Whether you like a little fire in your cooking or just enjoy growing peppers with attitude, habaneros always bring a bold, lively energy to the farm.

Tiny desert divas with big personalities — and my most dramatic crop by far. NuMex chilis are bred for heat, sun, and sand, which means they thrive in the kind of blistering temperatures that make other plants reconsider their life choices. They germinate when they feel like it, grow at their own pace, and generally act like they’re doing me a favor by existing at all. But once they settle in, they produce like crazy — bright, flavorful pods perfect for roasting, drying, or adding a kick to just about anything. Growing them is always an adventure, but honestly? I wouldn’t have it any other way.
Sweet, compact, and full of old‑school flavor — these peppers are small but mighty. Sheepnose Pimentos are heirloom gems known for their thick walls, rich sweetness, and perfect “pimento cheese” personality. They grow low and sturdy, producing round, cheerful red pods that look like they came straight out of a seed catalog from 1920. These peppers thrive in our greenhouse in vertical planters, offering reliable harvests and unbeatable flavor for stuffing, roasting, or turning into the world’s best homemade pimento spread. Quietly dependable and always delicious, Sheepnose Pimentos are a true staple of Stargazer Farm.
Small, fiery, and absolutely living up to their name. Firecracker Peppers are the little sparks of chaos in our pepper lineup — compact plants that explode with bright, spicy pods all season long. They grow fast, they grow hot, and they grow like they’re trying to prove something. Perfect for salsas, stir‑fries, pickling, or adding a surprise kick to any dish, these peppers bring heat without apology. Growing them is always a lively experience, but honestly? Their bold flavor and nonstop production make every spicy moment worth it.
The quiet heroes of the kitchen and some of the most dependable crops on the farm. Onions thrive in Central Texas, and our beds are filled with a colorful mix of red, white, and yellow varieties — each bringing its own flavor and personality. Yellow onions are the classic all‑purpose workhorses, whites bring a clean, sharp brightness, and reds add color and sweetness to fresh dishes. Alongside them, our Tokyo White bunching onions grow fast and flavorful, perfect for snipping into soups, stir‑fries, and anything that needs a fresh onion kick. Together, they form the backbone of countless recipes and a cornerstone of Stargazer Farm’s harvest.

The companion herb that keeps our tomatoes happy and our kitchen stocked. Sweet and Italian basil are planted throughout the farm — tucked beside our tomatoes as classic companions and filling an entire raised bed in GH2. In the garden, basil helps improve airflow, deter pests, and support healthier growth for nearby crops. In the kitchen, it’s the herb we reach for constantly: bright, fragrant, and perfect for sauces, salads, marinades, and anything that needs a burst of fresh flavor. Whether it’s boosting our tomatoes or starring in its own harvest, basil is an essential part of the rhythm of Stargazer Farm.
